Chicken Popcorn Recipe: Spicy Chettinad Style
Share
This chicken popcorn recipe gives you bites that are crunchy outside, juicy inside and properly fiery. Bite-sized pieces pick up a craggy crust from three everyday flours, and all the heat and depth comes from one pack of Chettinad Fire Roast.
The marinade soaks into the crust, so the flour needs nothing added. Make a double batch for match night. They go fast.

Why you'll love it
- Better than takeaway. Crunchier crust, juicier chicken, and you control the oil.
- Fry or air fry. Both methods below.
- One pack seasons everything. Chicken and crust.
Ingredients for Chettinad chicken popcorn
- 250–300 g boneless chicken thigh
- 1 pack Chettinad Fire Roast
- 40 ml water
- 1 tbsp melted butter or ghee
- Crust: 3 tbsp maida, 2 tbsp cornflour, 1 tbsp rice flour
- Oil for deep-frying (or oil spray for the air fryer)
- Cooling dip: ½ cup hung curd, 1 tsp lemon juice, 1 tsp honey
- Lemon wedges and onion rings, to serve
How to make chicken popcorn at home
- Cut the chicken. Cut it into 2 cm bites. Pat dry.
- Marinate in Chettinad Fire Roast. Mix the blend with 40 ml water and the melted butter or ghee. Toss the chicken through and leave for 15 minutes.
- Build the crust. Mix the three flours in a bowl. Add the marinated chicken and toss until the flour soaks up the marinade into a rough, craggy coat. If you see dry patches, sprinkle in 1–2 tsp water. Rest for 5 minutes so the crust sets.
- Deep fry. Heat oil to 170–175°C: a pinch of flour should sizzle steadily, not burn. Fry in small batches for 4–5 minutes until deep golden and cooked through (75°C in the centre). Drain on a rack.
- Or air fry. Spray the basket and the chicken with oil. Cook at 200°C for 12–14 minutes, shaking twice.
- Make the dip. Whisk the hung curd, lemon juice and honey. Serve with the hot chicken, lemon wedges and onion rings.
Tips for crispy chicken popcorn
- Use thigh. It stays juicy through high-heat frying.
- Small batches. Crowding drops the oil temperature and makes the crust soggy.
- Rice flour is the crunch. Don't skip it.
