Chettinad Chicken Fry at Home: Fiery South Indian Recipe
Share
Chettinad cooking from Tamil Nadu is famous for its heat, and not just chilli heat. Black pepper, fennel, curry leaves and dried red chillies, roasted until fragrant, give it a deep, layered fire that is completely different from North Indian masalas.
Roasting and grinding all of that at home takes time. Chettinad Fire Roast brings those roasted spices together in one ready-to-use chicken marinade, so you get the signature taste in a fraction of the effort.
What you need (serves 2)
- 250–300 g chicken, boneless or small bone-in pieces
- 1 pack Chettinad Fire Roast marinade
- 40 ml water
- 1–2 tbsp ghee, butter or coconut oil
- Optional: a handful of fresh curry leaves, sliced onion
How to make Chettinad chicken fry
1. Cut
Cut the chicken into small, even pieces, about 1.5 inches. Smaller pieces give you more crispy, spice-coated edges, which is the best part of a good chicken fry.
2. Coat
Mix the Chettinad Fire Roast blend with 40 ml water and a little melted ghee into a thick paste. Coat the chicken well and marinate for 15 minutes.
3. Cook
Heat ghee or coconut oil in a heavy pan. If you have fresh curry leaves, let them crackle for a few seconds first. Add the chicken in a single layer and sear on medium-high for 3–4 minutes without moving it. Flip, cover for 5 minutes on medium heat, then uncover and keep tossing until the pieces are dark, dry and coated, about 12–15 minutes in total for boneless chicken. It is done when there is no pink in the centre.
Air fryer option: 200°C for roughly 15–18 minutes, flipping halfway.
Tips
- Cook it dry. A proper chicken fry should have no gravy, just spice clinging to every piece.
- Coconut oil adds an authentic South Indian aroma.
- Cool it down with curd rice, sliced onions or a squeeze of lemon on the side.
What to serve it with
Chettinad chicken fry is excellent with parottas, steamed rice and rasam, or as a starter. It also makes a punchy filling for wraps and rice bowls.
