Tandoori Chicken Without Oven: Smoky Pan Recipe at Home
Share
Real tandoori chicken comes out of a clay tandoor at over 400°C. Most home kitchens do not have one, and many do not even have an oven. The good news: a heavy pan on a regular gas stove gets you smoky, charred, juicy tandoori chicken in about 30 minutes.
The classic marinade needs curd, ginger-garlic paste, Kashmiri chilli, garam masala, kasuri methi and a few hours of waiting. We have packed that into one sachet, Tandoori Heritage, our tandoori chicken marinade masala made with smoky paprika, cumin and aromatic herbs.
What you need (serves 2)
- 250–300 g chicken (boneless pieces, or small drumsticks with a few cuts)
- 1 pack Tandoori Heritage marinade
- 40 ml water
- 1–2 tbsp butter or ghee
- A heavy pan: cast iron or a thick-bottomed non-stick tawa
- To serve: sliced onions, lemon, mint chutney, naan
How to make tandoori chicken without an oven
1. Cut
Cut boneless chicken into 1.5–2 inch pieces. If using drumsticks, make 2–3 deep slashes on each so the marinade reaches the bone and the chicken cooks through on the stove.
2. Coat
Mix the Tandoori Heritage blend with 40 ml water and a little melted butter or ghee into a thick paste. Coat the chicken thoroughly, rubbing it into the slashes. Marinate for 15 minutes.
3. Cook on the pan
Heat the pan on medium-high until it is properly hot, then add a spoon of ghee. Place the pieces in a single layer and leave them alone for 3–4 minutes so a charred crust forms. Moving them too early is the most common reason for pale, stewed-looking chicken.
Flip, then lower the heat to medium and cover the pan for 5–6 minutes so the inside cooks through. Uncover, raise the heat, and turn the pieces until all sides are charred. Boneless chicken usually takes 12–15 minutes in total, drumsticks closer to 20–25. It is done when there is no pink in the centre and the juices run clear (75°C inside).
4. Add the smoke (optional, but worth it)
This is the old dhaba trick for tandoor flavour without a tandoor. Heat a small piece of charcoal on the gas flame until it glows red. Place it in a small steel bowl in the middle of the pan with the chicken, pour a few drops of ghee on the coal, and cover immediately. Leave for 2–3 minutes, then remove the bowl. Always do this with the window open and never leave the coal unattended.
5. Serve
Brush with a little melted butter, then serve with sliced onions, lemon wedges and mint chutney.
Tips for restaurant-style tandoori chicken at home
- A really hot pan gives char. A lukewarm pan gives boiled chicken.
- Don't overcrowd. Cook in two batches if needed.
- Thigh and leg pieces stay juicier than breast.
- Have an air fryer? 200°C for roughly 15–18 minutes, flipping halfway, works beautifully too.
