Lemon Pepper Chicken in Air Fryer: Zesty, Juicy and Quick

Lemon pepper chicken is the weeknight hero: light, fresh, and happy in a salad, a wrap or straight off the plate. The flavour comes from three things working together: bright lemon, aromatic herbs and a peppery kick.

Lemon Herb Pepper combines all three in one chicken marinade, so you skip the zesting and grinding and go straight to cooking.

What you need (serves 2)

  • 250–300 g boneless chicken (breast or thigh)
  • 1 pack Lemon Herb Pepper marinade
  • 40 ml water
  • 1–2 tbsp butter or ghee
  • Optional: fresh lemon wedges and chopped parsley or coriander

How to make lemon pepper chicken in an air fryer

1. Cut

Cut chicken into even strips or bite-sized pieces. For salads and wraps, strips slice beautifully after cooking.

2. Coat

Mix the blend with 40 ml water and melted butter or ghee. Toss the chicken until evenly coated and marinate for 15 minutes.

3. Cook

Preheat the air fryer to around 200°C. Arrange the chicken in a single layer and cook for roughly 12–16 minutes, flipping halfway. Breast meat cooks faster than thigh, so check early. It is done when there is no pink in the centre and the juices run clear (75°C inside).

No air fryer? Pan-sear in a hot pan with a little butter for 10–12 minutes, turning often.

4. Finish

Squeeze fresh lemon over the top and scatter chopped herbs just before serving for an extra pop of freshness.

  • As a quick protein-packed lunch box option
